You bought a game that is in 'Early Access", the game is not ready for a full release. If you buy an 'Early Access' game you are testing the game for the devs, that's what Early Access is and it gives you a chance to help the devs make the game better by providing feedback.

i logged out 10 mins ago as there was an announcement in the game that they were about to patch the server, so i would guess they are temporarily offline for now.

I did manage to to harvest my way out. We seem to get a reaonable amount of trees on my starter island. You definitely seem to have had less luck with your experience. Hopefully an update will fix your problems sooner rather than later.

trees definitely respawn.....i got stuck in one as it respawned right where i was stood!
