question on Dedicated Hosting Requirement's

Hi everyone, I recently Got ahold of a Dual core Xeon Server and im trying to figure out that the largest size server I could setup would be. the system has 256GB of ddr4 Ram and dual Xeon E5-2695 v3 14 core 2.0 GHz turbos at 2.6Ghz if that helps. appreciate any recommendations.

I am currently running a 5x5 on 128gb at 4.2ghz 16cores   but i believe i read somewhere the suggested amount is 1 core and 3gb per grid  however i have 16cores and rarely ever see cpu above 25% - 35% and with 128gb i see ram spikes to around 60 - 70% depending on playerbase
